In a large mixing bowl, dissolve sugar in warm water. Sprinkle yeast over the top and let sit for about 5 minutes, until the mixture becomes frothy.
Add flour, 1 tablespoon olive oil, and salt to the yeast mixture. Stir until a dough forms. Transfer to a floured surface and knead for 5 minutes until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until it has doubled in size.
Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat as well.
Once the dough has risen, punch it down and transfer to a floured surface. Roll it out to your desired thickness and shape.
