Vegan Sesame Noodles & Tofu

Cook soba noodles according to package instructions, then drain and set aside.
Cut tofu into cubes and pat dry with a paper towel to remove excess moisture.
In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add tofu cubes and pan-fry until golden and crispy on all sides, about 8-10 minutes.
In a bowl, whisk together soy sauce, rice vinegar, maple syrup, grated ginger, minced garlic, and the remaining tablespoon of sesame oil.
In a large mixing bowl, combine cooked soba noodles, crispy tofu, and the sauce. Toss to coat evenly.
