Ingredients
- 3 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 2 large potatoes, peeled and cubed
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 400 grams spinach, washed and chopped
- Salt to taste
- 1/2 cup water
Steps:
- Heat oil in a large pan and add cumin seeds until they start to crackle.
- Add the cubed potatoes and stir-fry until they are lightly browned.
- Add onions, garlic, and ginger to the pan, cooking until the onions are soft and golden.
- Stir in turmeric, garam masala, coriander, and chili powder, cooking for about 1 minute.
- Add the chopped spinach and water, and cover the pan. Cook on low heat for 20 minutes or until the potatoes are cooked through and the spinach is wilted.
