Ingredients

  • 3 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 2 large potatoes, peeled and cubed
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 400 grams spinach, washed and chopped
  • Salt to taste
  • 1/2 cup water

Steps:

  1. Heat oil in a large pan and add cumin seeds until they start to crackle.
  2. Add the cubed potatoes and stir-fry until they are lightly browned.
  3. Add onions, garlic, and ginger to the pan, cooking until the onions are soft and golden.
  4. Stir in turmeric, garam masala, coriander, and chili powder, cooking for about 1 minute.
  5. Add the chopped spinach and water, and cover the pan. Cook on low heat for 20 minutes or until the potatoes are cooked through and the spinach is wilted.
