Ingredients
- 3 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp salt
- 8 corn tortillas
- 1 avocado, sliced
- 1 cup red cabbage, shredded
- 1 carrot, shredded
- 2 tbsp lime juice
- 1 tbsp cilantro, chopped
Steps:
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, smoked paprika, cumin, chili powder, and salt. Spread onto a baking sheet.
- Roast for 25-30 minutes or until tender and lightly browned.
- While potatoes roast, prepare the slaw by mixing red cabbage, carrot, lime juice, and cilantro.
- Warm tortillas, then assemble tacos by placing roasted sweet potatoes, avocado slices, and a heap of slaw in each tortilla.
