Ingredients

  • 1 cup dried green lentils, rinsed and drained
  • 2 cups water
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1/4 cup tomato paste
  • 1 cup tomato sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • Salt and pepper to taste

Steps:

  1. Place the lentils and water in a medium saucepan over medium-high heat. Bring to a boil, then reduce heat and simmer until lentils are tender, about 20 minutes.
  2. While the lentils cook, heat olive oil in a large skillet over medium heat. Sauté the onion and bell pepper until soft, about 5 minutes.
  3. Add the garlic, chili powder, smoked paprika, cumin, and cayenne pepper to the skillet. Stir to combine and cook for 1 minute.
  4. Mix in the tomato paste, tomato sauce, apple cider vinegar, and brown sugar. Season with salt and pepper, then simmer for an additional 5 minutes.
  5. Drain any excess water from the cooked lentils and add them to the skillet. Stir well to coat the lentils with the sauce.
