Recipe Description
A comforting classic, this dish features flavorful vegan sausages served atop creamy mashed potatoes with a rich and savory onion gravy, perfect for a cozy night in.
Ingredients
- 8 vegan sausages
- 2 large onions, thinly sliced
- 2 tbsp vegetable oil
- 1 tbsp soy sauce
- 2 cups vegetable broth
- 2 tbsp cornstarch mixed with 2 tbsp water
- Salt and pepper to taste
- 1/4 cup plant-based milk
- 2 tbsp vegan butter
Steps:
- Boil the potatoes in salted water until tender, about 20 minutes. Drain and return them to the pot.
- Add plant-based milk and vegan butter to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
- While the potatoes are cooking, heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the vegan sausages and cook according to package instructions until browned. Remove and set aside.
- In the same skillet, add the remaining vegetable oil and sliced onions. Sauté until soft and golden.
- Add soy sauce and vegetable broth to the onions. Bring to a simmer and slowly stir in the cornstarch mixture to thicken. Season with salt and pepper.
