Recipe Description

Ingredients
- 2 cups dried split peas, rinsed
- 8 cups vegetable broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 potatoes, cubed
Steps:
- Combine split peas and vegetable broth in a large pot. Bring to a boil, then simmer for 30 minutes.
- Add carrots, celery, onion, garlic, thyme, and bay leaf. Cook until vegetables are tender, about 30 minutes.
- Add potatoes and cook until tender. Remove bay leaf, season with salt and pepper, and serve warm.
