Recipe Description

Ingredients

  • 2 cups dried split peas, rinsed
  • 8 cups vegetable broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 potatoes, cubed

Steps:

  1. Combine split peas and vegetable broth in a large pot. Bring to a boil, then simmer for 30 minutes.
  2. Add carrots, celery, onion, garlic, thyme, and bay leaf. Cook until vegetables are tender, about 30 minutes.
  3. Add potatoes and cook until tender. Remove bay leaf, season with salt and pepper, and serve warm.
