A hearty and comforting stew, this Vegan Goulash combines tender chunks of potatoes and carrots in a rich, smoky tomato sauce with sweet paprika. It’s a perfect warming dish for cold evenings.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 bell pepper, diced
- 2 tablespoons sweet paprika
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish
Steps:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic, cooking until softened.
- Add the carrots, potatoes, and bell pepper, cooking for an additional 5 minutes.
- Stir in the sweet paprika, smoked paprika, and cayenne pepper, cooking for 1 minute until fragrant.
- Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer, covered, for about 50 minutes or until the vegetables are tender.
- Season with salt and pepper to taste.
