Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 bell pepper, diced
  • 2 tablespoons sweet paprika
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Steps:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, cooking until softened.
  2. Add the carrots, potatoes, and bell pepper, cooking for an additional 5 minutes.
  3. Stir in the sweet paprika, smoked paprika, and cayenne pepper, cooking for 1 minute until fragrant.
  4. Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce the heat and simmer, covered, for about 50 minutes or until the vegetables are tender.
