    Experience the essence of Dutch spring with this elegant vegan interpretation of haring tartare. Avocado and marinated mushrooms come together to create a creamy, umami-rich dish, perfect for impressing at any dinner party.

    Ingredients

    • 2 large avocados, ripe
    • 1 cup oyster mushrooms, finely chopped
    • 2 tablespoons soy sauce
    • 1 teaspoon liquid smoke
    • 1 tablespoon lemon juice
    • 2 teaspoons capers, chopped
    • 2 tablespoons red onion, minced
    • 1 tablespoon fresh dill, chopped
    • Salt and black pepper to taste
    • Microgreens for garnish
    • 1 tablespoon walnuts, crushed (optional)

    Steps:

    1. Marinate the chopped oyster mushrooms with soy sauce and liquid smoke for 15 minutes.
    2. In a mixing bowl, mash the avocados until smooth but still with some chunky texture.
    3. Mix the lemon juice, capers, red onion, and dill into the mashed avocado. Season with salt and pepper.
    4. Gently fold the marinated mushrooms into the avocado mixture until well combined.
    5. Serve the tartare immediately, garnished with microgreens and sprinkled with crushed walnuts if using.
