Ingredients
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- 400g can of tomatoes
- 2 cups vegetable broth
- 1 cup long grain parboiled rice, rinsed
- Salt to taste
- 1 cup frozen peas
Steps:
- Heat oil in a large pot over medium heat.
- Add onion, bell pepper, and garlic. Cook until softened, about 5 minutes.
- Stir in thyme, smoked paprika, and cayenne pepper.
- Add tomatoes and cook until the mixture thickens, about 10 minutes.
- Stir in vegetable broth and bring to a boil.
- Stir in frozen peas, cover, and cook for an additional 5 minutes.
- Season with salt to taste and serve.
