A spicy and savory one-pot rice dish that’s perfect for any occasion. This vegan version of the classic West African Jollof Rice is packed with tomatoes, onions, and peppers for an irresistible flavor.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 400g can of tomatoes
  • 2 cups vegetable broth
  • 1 cup long grain parboiled rice, rinsed
  • Salt to taste
  • 1 cup frozen peas

Steps:

  1. Heat oil in a large pot over medium heat.
  2. Add onion, bell pepper, and garlic. Cook until softened, about 5 minutes.
  3. Stir in thyme, smoked paprika, and cayenne pepper.
  4. Add tomatoes and cook until the mixture thickens, about 10 minutes.
  5. Stir in vegetable broth and bring to a boil.
  6. Stir in frozen peas, cover, and cook for an additional 5 minutes.
  7. Season with salt to taste and serve.
