    Ingredients

    • 1 tsp salt
    • 1.5 cups water
    • 4 medium potatoes, peeled and boiled
    • 1 tbsp olive oil
    • 1 onion, finely chopped
    • 1 tsp smoked paprika
    • 1 tsp cumin
    • 1 tsp red pepper flakes
    • Salt and black pepper to taste

    Steps:

    1. In a large bowl, mix flour and salt. Gradually add water and knead until smooth dough forms. Cover and let rest for 30 minutes.
    2. Mash the boiled potatoes. In a pan, heat olive oil over medium heat and sauté onions until translucent. Add mashed potatoes, smoked paprika, cumin, red pepper flakes, salt, and pepper. Cook for 5 minutes. Set aside.
    3. Divide the dough into 8 equal balls. On a floured surface, roll out each ball into a thin circle.
    4. Spread the potato mixture over half of each circle, leaving a small border around the edge. Sprinkle with chopped parsley. Fold the dough over to cover the filling and press edges to seal.
    5. Heat a non-stick pan over medium heat. Cook each gözleme until golden brown on both sides, approximately 3-4 minutes per side. Serve hot with lemon wedges.
