Recipe Description

These vegan Pirukad, traditional Estonian pastries, are a delightful treat perfect for any occasion. Each pastry is filled with a savory mixture of finely chopped mushrooms and onions, spiced perfectly with a hint of smoked paprika and black pepper, encapsulated in a soft, homemade dough. These hand-held pies are not only satisfying but also a wonderful vegan twist on a beloved classic. Ideal for gatherings, these Pirukad can be made ahead and are sure to impress both vegans and non-vegans alike.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup vegan butter, cold and cubed
  • 1/2 cup cold water
  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cups mushrooms, finely chopped
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tsp dried parsley

Steps:

  1. In a large bowl, mix flour and salt. Add vegan butter and combine until the mixture resembles coarse crumbs. Gradually add cold water and stir until the dough comes together. Chill for 30 minutes.
  2. Heat olive oil over medium heat. Add onions and cook until translucent. Add mushrooms and cook until all moisture evaporates. Season with smoked paprika, salt, and pepper. Set aside to cool.
  3. Preheat oven to 375 degrees F (190 degrees C).
  4. Roll out the dough on a floured surface to about 1/4 inch thick. Cut out circles using a large cookie cutter.
  5. Spoon the mushroom mixture onto half of each dough circle. Fold the dough over the filling to create a half-moon shape. Press edges together with a fork to seal.
  6. Serve warm or at room temperature.
