Recipe Description

A plant-based twist on the classic, these Vegan Scotch Eggs feature a savory chickpea and vegetable mix surrounding a tender mock egg center, all wrapped in crispy breadcrumbs.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup cooked vegetables (such as peas and carrots), finely chopped
  • 1/4 cup nutritional yeast
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 vegan eggs (prepared according to package directions)
  • 1 cup breadcrumbs
  • 1/2 cup flour
  • 1/2 cup plant milk
  • Oil for frying

Steps:

  1. Mash chickpeas in a bowl until mostly smooth.
  2. Mix in the vegetables, nutritional yeast, paprika, salt, and pepper.
  3. Divide the chickpea mixture into four equal parts and flatten into discs.
  4. Place a vegan egg in the center of each disc and mold the chickpea mixture around it to encase it completely.
  5. Prepare a breading station with separate bowls for the flour, plant milk, and breadcrumbs.
  6. Heat oil in a pan and fry the scotch eggs until golden brown and crispy.
  7. Drain on paper towels and serve warm.
