Recipe Description
A plant-based twist on the classic, these Vegan Scotch Eggs feature a savory chickpea and vegetable mix surrounding a tender mock egg center, all wrapped in crispy breadcrumbs.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1/2 cup cooked vegetables (such as peas and carrots), finely chopped
- 1/4 cup nutritional yeast
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 vegan eggs (prepared according to package directions)
- 1 cup breadcrumbs
- 1/2 cup flour
- 1/2 cup plant milk
- Oil for frying
Steps:
- Mash chickpeas in a bowl until mostly smooth.
- Mix in the vegetables, nutritional yeast, paprika, salt, and pepper.
- Divide the chickpea mixture into four equal parts and flatten into discs.
- Place a vegan egg in the center of each disc and mold the chickpea mixture around it to encase it completely.
- Prepare a breading station with separate bowls for the flour, plant milk, and breadcrumbs.
- Heat oil in a pan and fry the scotch eggs until golden brown and crispy.
- Drain on paper towels and serve warm.
