Ingredients
- 200g soba noodles
- 200g firm tofu
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tsp grated ginger
- 1 garlic clove, minced
- 2 tbsp sesame seeds
- 2 green onions, chopped
Steps:
- Cook soba noodles according to package instructions, then drain and set aside.
- Cut tofu into cubes and pat dry with a paper towel to remove excess moisture.
- In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add tofu cubes and pan-fry until golden and crispy on all sides, about 8-10 minutes.
- In a bowl, whisk together soy sauce, rice vinegar, maple syrup, grated ginger, minced garlic, and the remaining tablespoon of sesame oil.
- In a large mixing bowl, combine cooked soba noodles, crispy tofu, and the sauce. Toss to coat evenly.
