Crisp and fragrant, these spiced cookies are a vegan nod to the Dutch holiday favorite.
Ingredients
- 300 g all-purpose flour
- 150 g brown sugar
- 100 g vegan butter
- 2 tsp baking powder
- 4 tsp speculaas spice (or a mix of cinnamon, nutmeg, cloves, ginger)
- A pinch of salt
- 2-3 tbsp plant-based milk
Steps:
- Mix all dry ingredients together.
- Cut in the vegan butter until mixture resembles coarse crumbs.
- Add plant-based milk to form a dough.
- Roll out and cut into shapes.
- Bake at 175°C for 10-12 minutes.
