Recipe Description
A vegan take on the classic Welsh dish, combining a rich and tangy cheese sauce made from cashews and nutritional yeast, served over toasted bread for a delicious and satisfying meal.
Ingredients
- 1 cup cashews, soaked and drained
- 1/4 cup nutritional yeast
- 1 tbsp soy sauce
- 1 tsp mustard
- 1 tsp vinegar (apple cider or white)
- 1/2 cup water
- Salt and pepper to taste
- 4 slices of your favorite bread, toasted
Steps:
- In a blender, combine the soaked and drained cashews, nutritional yeast, soy sauce, mustard, vinegar, water, salt, and pepper. Blend until smooth and creamy.
- Transfer the sauce to a small saucepan and cook over medium heat, stirring constantly, until thickened (about 5 minutes).
- Toast the bread slices to your liking.
- Generously spread the warm sauce over the toasted bread slices.
- Serve immediately, optionally garnished with a sprinkle of paprika or chopped chives for extra flavor.
