Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsweetened almond milk
  • 1/3 cup unsweetened applesauce
  • 1/4 cup vegetable oil

Steps:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix together flour, cornmeal, sugar, baking powder, and salt.
  3. Add almond milk, applesauce, and vegetable oil to the dry ingredients and stir until just combined.
  4. Pour batter into a greased 8-inch square baking dish.
  5. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
