    These savory sweet maple glazed carrots are tender and beautifully glazed with a thick coat of maple syrup and olive oil, making them the perfect side dish.

    Ingredients

    • 2 tablespoons olive oil
    • 3 tablespoons maple syrup
    • Salt and pepper to taste
    • Fresh parsley, chopped (optional for garnish)

    Steps:

    1. Preheat oven to 425°F (220°C).
    2. In a mixing bowl, toss the sliced carrots with olive oil, maple syrup, salt, and pepper until they are well coated.
    3. Spread the carrots out on a baking sheet in a single layer.
    4. Roast in the preheated oven for about 20-25 minutes, or until carrots are tender and glaze is caramelized, stirring once halfway through.
    5. Serve warm, garnished with fresh parsley if desired.
