Squeeze excess moisture out of the grated potatoes and onion using a clean kitchen towel.

In a large bowl, combine the grated potatoes and onion, garlic, flour, plant-based milk, baking powder, salt, and pepper. Mix until well combined.

Heat vegetable oil in a large skillet over medium heat. When hot, scoop the potato mixture to form pancakes, flattening them with a spatula.
