Recipe Description

A hearty and flavorful vegan black bean soup that’s perfect for warming up during the colder months. Loaded with spices and vegetables, it’s a delicious meal on its own or can be served with your favorite vegan bread.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 3 cans black beans, drained and rinsed
  • 4 cups vegetable broth
  • salt and pepper to taste
  • 1 lime, juiced
  • fresh cilantro for garnish

Steps:

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and red bell pepper. Cook until vegetables are softened, about 5 minutes.
  3. Stir in ground cumin and chili powder, cooking for another 1 minute.
  4. Add black beans and vegetable broth. Bring to a simmer and cook for 25 minutes.
  5. Use an immersion blender to puree the soup to your desired consistency.
  6. Serve hot, garnished with fresh cilantro.
