Recipe Description

A sumptuous vegan twist on the traditional Colombian coconut rice, made creamy and aromatic with coconut milk and sweetened to perfection.

Ingredients

  • 2 cups jasmine rice
  • 1 can coconut milk (400 ml)
  • 3 cups water
  • 1 cup shredded coconut
  • 2/3 cup sugar
  • 1 teaspoon salt

Steps:

  1. Rinse the jasmine rice until the water runs clear.
  2. In a large pot, combine the coconut milk, water, shredded coconut, sugar, and salt. Bring to a boil.
  3. Add the rinsed rice to the pot. Reduce heat to low, cover, and simmer for 40 minutes, or until rice is tender and liquid is absorbed.
  4. Fluff the rice with a fork and serve warm.
