Recipe Description
A sumptuous vegan twist on the traditional Colombian coconut rice, made creamy and aromatic with coconut milk and sweetened to perfection.
Ingredients
- 2 cups jasmine rice
- 1 can coconut milk (400 ml)
- 3 cups water
- 1 cup shredded coconut
- 2/3 cup sugar
- 1 teaspoon salt
Steps:
- Rinse the jasmine rice until the water runs clear.
- In a large pot, combine the coconut milk, water, shredded coconut, sugar, and salt. Bring to a boil.
- Add the rinsed rice to the pot. Reduce heat to low, cover, and simmer for 40 minutes, or until rice is tender and liquid is absorbed.
- Fluff the rice with a fork and serve warm.
