Recipe Description
A hearty and traditional Dutch split pea soup made vegan, perfect for cold winter days.
Ingredients
- 6 cups vegetable broth
- 2 bay leaves
- 2 carrots, diced
- 2 potatoes, diced
- 1 leek, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1/2 tsp smoked paprika
Steps:
- Rinse the split peas and combine with the vegetable broth in a large pot. Bring to a boil, then reduce to a simmer.
- Add bay leaves, simmer for 30 minutes.
- Add carrots, potatoes, leek, onion, garlic, thyme, and smoked paprika. Season with salt and pepper. Cook until the vegetables are tender, about 30 minutes more.
- Remove bay leaves before serving.
