Heat coconut oil in a skillet over medium heat. Add onion, red bell pepper, and tomato. Sauté until onion is translucent.
Add crumbled tofu to the skillet. Cook for 5 minutes, stirring occasionally.
Gently fold in ackee, being careful not to break it up too much. Season with turmeric, salt, and black pepper. Cook for another 5 minutes.
Sprinkle green onion and thyme over the scramble. Serve warm with some toasted whole grain bread for a complete meal.
