Delightfully light and filled with fresh veggies, these vegan rice noodle rolls are perfect for a quick and healthy meal.

Cook rice noodles according to package instructions then rinse under cold water and set aside.
Prepare the vegetables and set aside.
Mix all the ingredients for the sauce in a small bowl.
Soak a rice paper wrapper in warm water for about 20 seconds until it’s soft.
Lay out the wrapper and place a small amount of noodles, carrots, cucumber, cabbage, basil, and mint in the center.
Repeat with the remaining ingredients.
Serve with the dipping sauce.
