Cook rice noodles according to package instructions then rinse under cold water and set aside.

Prepare the vegetables and set aside.

Mix all the ingredients for the sauce in a small bowl.

Soak a rice paper wrapper in warm water for about 20 seconds until it’s soft.

Lay out the wrapper and place a small amount of noodles, carrots, cucumber, cabbage, basil, and mint in the center.
